With green tea · Middle Eastern

Moroccan-style mint green tea

Gunpowder green tea and spearmint, traditionally served sweet in small glasses.

Makes about 18 cupsSteep 3 min

Blend

  • ¼ cup gunpowder green tea
  • ¼ cup dried spearmint

One cup

  1. Heat water to about 175°F, just below a simmer.
  2. Pour 1 cup over 2 tsp of the mix and steep 3 minutes.
  3. Strain and sweeten; longer steeping turns it bitter.

Blending and storing

  • Mix in a dry bowl, then shake in a sealed glass jar to spread the spices evenly.
  • Keep jars away from light, heat and the stove. Most blends stay fresh about 6 months.
  • Shake the jar before each scoop; ground spices settle to the bottom.
  • Use dried ingredients only. Fresh herbs or fruit make the mix spoil.
